Since my birthday is in less than a week I thought I’d share how I spent my 31st birthday last year. We spent the day having fun in Manitou Springs and then we celebrated by having a five course meal at Margarita at Pine Creek in Colorado Springs. I do have an inner foodie in me that loves good food. It’s been on my bucket list to have a five course meal for such a long time. Honestly I don’t know what took me so long! Mackenzie, our youngest daughter was just 10 weeks at the time! Mila was 2.5 years old. It seemed crazy to try to take our toddler and infant with us to the five course meal but it actually worked out perfectly! The girls did well and Mila even tried new foods! Mackenzie got sleepy towards the end and we brought in her car seat so we could put her in and then we left. We put her to bed as soon as we got home.

I really enjoyed our five course meal at Margarita at Pine Creek. The restaurant uses seasonal food and the menu changes daily. It felt so gourmet and the food was all delicious! We started with an appetizer, soup and bread, salad, main course and desert. The carrot appetizer was delicious. The soup and bread was yummy.  I had never tried mussels but I didn’t like the texture and taste. Mila tried them with me but she didn’t like them either haha. For the main course Thomas chose the steak and I had the salmon. They were both absolutely delicious! Since it was my birthday they surprised me with all three deserts that were on the menu for the night. I was thrilled and shared them with my family. I even had room for leftovers to take home.

The garden was beautiful outside and I loved the lights lit up around the trees outside. We got there at 5:30 pm. We were the first ones to arrive so we chose the best spot in the dining room that had a view of the garden outside. I also love drinking water out of wine glasses. It was a wonderful ambience and the server was attentive.

All in all it was a wonderful experience and I hope to go back there sometime there again soon. Have you ever had a five course meal before?!
